To Die For Raspberry Muffins

 
 
This recipe was given to me at my wedding shower by a family friend and it really is to die for. The real name for this recipe is To Die For Blueberry Muffins, but I had just gotten back from picking raspberries at my grandparents so I thought I would switch it up.
 
 
To Die For Blueberry  Raspberry Muffins
 
{muffin}
1 1/2 c. flour
3/4 c. white sugar
1/2 tsp. salt
2 tsp. baking powder
1/3 c. vegetable oil
1/3 c. milk
1 egg
1 cup fresh raspberries
 
{crumb topping}
 
1/2 c. white sugar
1/3 c. flour
1/4 c. butter, cubed
1 1/2 tsp. ground cinnamon
{ you can add a chopped nut as well}
 
Grease muffin cups or line with  muffin liners. Combine flour, sugar, salt, and baking powder. Place vegetable oil into a 1 c. measuring cup; add egg and enough milk to fill the cup. Mix together and then pour into dry ingredients. Fold in berries and mix everything together. Fill muffins cups almost to the top  and sprinkle with crumb topping mixture.
 
{To make the topping}
 Mix together all ingredients with a fork.
 
Bake at 400 for 20-25 minutes. Let stand for 5 minutes and then remove from muffin tin onto a cooling rack.

Oatmeal Scones



The variety of combinations of flavors to put into a scone are endless. My favorite though it an oatmeal scone with cranberries. I make scones twice a month for my husband to freeze and take to work and this was a new one I tried this summer. Don't be scared to make a good scone, if all you have ever eaten is a dry bad one.

Oatmeal Scones

1 1/2 c. old fashioned rolled oats or quick oats
1/4 c. milk
1/4 c. heavy cream
1 egg
1 1/2 c. flour
1/3 c. sugar, plus 1 Tbsp. for sprinkling
2 tsp. baking powder
1/2 tsp. salt
10 Tbsp. cold unsalted butter, cut into 1/4-inch cubes
1/2 c. Crasins

Set the oven to 375. Spread the oats onto a baking sheet and toast them in the oven for 7-9 minutes; cool completely. Up the oven temp to 450. Whisk together the milk,cream, and egg in a measuring cup and remove 1 Tbsp and set it aside for glazing.
Place the flour, sugar, baking powder, and salt into a bowl and mix together. Put in the cold, cubed up butter in with dry ingredients and mix until the butter is about pea size. You can do this with a pastry cutter as well as a hand/stand mixer. Add in crasins along with the cooled oats. Mix together. Fold in the liquid ingredients until large clumps form.
Using your hands gently knead the dough until it comes together. Do not knead to much or your dough will dry out. Dust your counter with flour and turn your dough onto the surface. You can form into a flat 7 inch round and cut like a pizza into triangles. Or scoop small amounts depending on the size you want; right onto the cookie sheet. Brush the scones with left over milk/egg mixture.
Bake at 450 for 12-14 minutes. Once these are baked and cooled you can store them for up to 3 days in an air tight container or freeze them like we do.

Cheese Cake Brownies


Please don't hate me when I say this. I don't like chocolate. There are however a few ways I will eat it and one way is if you mix it with cheese cake. Never in my life that I can recall have I made home made brownies; its got to be one of the easiest things besides cookies that one can bake. And if you add cheese cake to the top, well it makes it ten times as good.

Cheese Cake Brownies

{brownie part}

1 stick butter melted
1 c. sugar
1 tsp. vanilla
1/2 c. cocoa
pinch of salt
1 tsp. apple cider vinegar
2 eggs
3/4 c. flour

{cheese cake part}

8 oz. cream cheese at room temp
1/4 c. sugar
1 egg
1/2 tsp. vanilla

Start with the brownie part and mix together the butter, sugar, vanilla, apple cider and eggs until nice and fluffy. Add in the salt, cocoa, and flour. Pour all but 1/4 cup into a 8x8 baking pan that has been buttered. Set aside.
Mix all of the ingredients for the cheese cake into a separate bowl and mix until all of the cream cheese is nice a smooth. 1-2 minutes. Pour this on top of the brownie.  Then dollop the remaining 1/4 cup around on top of the cheese cake. Using a butter knife swirl through the cream cheese mixture to create a swirl pattern.
Bake at 350 for 30 minutes. Cool completely before cutting into them and enjoying.

Sugar Cookie Bars


I thought I would start with something simple. Yet scrumptious. I have never really loved taking the time to cut out sugar cookies, so when I saw this idea of just making them into bars I knew I had to try it. It said it was suppose to make a 9x13 pan, but I had a lot of room left after I was done. I would double the batch or you could just do what I did and stop where the dough stops. In this recipe you get all the flavor without all the hard work.


Sugar Cookie Bars

2 1/2 c. flour
1/2 tsp. baking powder
1/2 tsp. salt
1/2 c. butter ( melted and cooled)
1 c. sugar
1 egg
1 1/2 Tbsp. sour cream
1 tsp. vanilla

Frosting

1/4 cups butter
2 c. powder sugar
1/8 c. half & half
1 tsp. vanilla
Pinch of salt
(food coloring if you want color)

For the cookie dough you are going to want mix the dry ingredients into a bowl and set aside. Put the butter, sugar and egg into a separate bowl together and mix for 1-2 minutes, until nice and fluffy. Hand mix in the vanilla and sour cream. I like to add the dry ingredients 1/2 to 1 cup at a time to make sure it all gets mixed well. After everything has come together nicely go ahead and place in buttered 9x13 pan. Bake at 375 for 15-17 minutes. Let cool.
Mean while add all ingredient for the frosting into a clean bowl and mix until you get a whip cream consistency. Add whatever color or colors of food die to the mix and then spread onto bars. Cut into what ever size you need and enjoy.
